Lemon Coconut Bliss Balls

These bliss balls hit the spot if you feel like a healthy sweet treat.I sweetened with stevia which is natural sweetener that has no effect on blood sugar levels. Great as a snack or guilt free dessert. This original recipe is from  Libby Nathan – The Foodologist , which I  altered a bit because I wanted to make something with stevia.

Ingredients (Makes ~ 25 balls of 20g each)

2 cups desiccated coconut, plus extra for rolling

1 cup of cashews soaked

1 cup mixed macadamia’s brazil nuts walnuts and almonds – soaked

Zest of one organic lemon

Juice from one lemon

4 tablespoons melted coconut oil

6 scoops of stevia powder – or ½ tsp of green stevia powder ( equivalent to 6-8 tsp of sugar)

½ teaspoon vanilla extract

A pinch of sea salt

2 tablespoons coconut flour



  1. Place nuts and coconut in food processor and blend to a fine meal ( soak the nuts for a few hours if possible).
  2. Add other ingredients
  3. Shape the mix into little balls and roll in desiccated coconut
  4. Refrigerate until set or freeze to store. Will keep in fridge for one week.
