These bliss balls hit the spot if you feel like a healthy sweet treat.I sweetened with stevia which is natural sweetener that has no effect on blood sugar levels. Great as a snack or guilt free dessert. This original recipe is from Libby Nathan – The Foodologist , which I altered a bit because I wanted to make something with stevia.
Ingredients (Makes ~ 25 balls of 20g each)
2 cups desiccated coconut, plus extra for rolling
1 cup of cashews soaked
1 cup mixed macadamia’s brazil nuts walnuts and almonds – soaked
Zest of one organic lemon
Juice from one lemon
4 tablespoons melted coconut oil
6 scoops of stevia powder – or ½ tsp of green stevia powder ( equivalent to 6-8 tsp of sugar)
½ teaspoon vanilla extract
A pinch of sea salt
2 tablespoons coconut flour
- Place nuts and coconut in food processor and blend to a fine meal ( soak the nuts for a few hours if possible).
- Add other ingredients
- Shape the mix into little balls and roll in desiccated coconut
- Refrigerate until set or freeze to store. Will keep in fridge for one week.
